I Wanted to Share this Easy to Make, Delicious Chicken Pot Pie Recipe......

Kenny & the kids love this easy to make pot pie. It's even better if you make it the night (or morning) before you plan on serving it. Teri made this for our family after I gave birth to Alison and we all enjoyed it so much that I asked her for the recipe. It has been a favorite winter meal ever since. The only change I've made is I use a store bought crust i.e., Pillsbury deep crust pie shell rather than make my own.

I was able to make 2 chicken pot pies with this recipe:

1/3 cup of butter
1/3 cup of all purpose flour
1/2 tsp salt
1/4 tsp pepper
1/3 cup onion (1 small)

1 3/4 cup chicken broth
2/3 cup milk
2 1/2 cups cooked chicken (approx. 3-4 chicken breast)
1 pkg. frozen vegetables (peas & carrots)

Preheat oven to 425-
Heat butter over low heat--when melted add in onion & saute--then add flour, salt & pepper--stirring constantly until mixture is smooth & bubbling--remove from heat--add chix broth & milk--put back on flame--heat until boiling--stirring constantly (when comes to a complete boil continue stirring 1 minute longer)--add chicken & frozen vegetables (stir)--turn flame off--add chicken filling to pie crust--use the other shell crust to top your pot pie--cut 4 slits on top of crust. Cook uncovered for 30-35 minutes-or until crust is browned.

After cooled you can refrigerate. Slice & reheat the next day.

I LOVE any easy to make, tastes good, I can't believe I made it, that our whole family enjoys, makes my life easier recipes--and this is definitely one of them. I hope your family enjoys it as much as ours :)

Kenny's Birthday Celebration was last week....

Ruby Tuesday's doesn't sing or put a candle in your dessert for fear of disturbing other customers - whatever - but Kenny made sure we sang "happy birthday" to him anyway. When we sang with our library voices; Kenny said "what is this an undercover birthday?" and so he demanded that we sing again, this time with our stadium voices -embarrassing.

Mom was actually trying to take a picture of Richie but a strong ocean wind blew me in front of the camera just as she snapped. Thank God for strong ocean winds!!!!

The "Get Together" & Ken (H)'s visit

We had a busy weekend which included a visit from Ken (H) and a family reunion.

The Get Together is a Doyle family reunion/tradition that occurs each year (usually) on the Saturday between Christmas & New Years. I asked my mother how and when it started and she recalled that it started with her father going to his brother Gene’s house to watch New Year’s Day football games and it somehow grew from there. We guessed that it must be at least fifty years of “getting together.” In the earlier years, it was held at different ones homes but for me it will forever remain in my memory at my Uncle Larry & Aunt Chris’s home. It includes (from my mother’s side of the family) aunts, uncles, cousins and long time friends of the Doyle Family.

Before heading out to the "get together" we stopped to visit with my 96 year old, great-aunt, Margie. Uncle Gene & Aunt Bonnie were visiting too.

Contrary to what some might say, I think as a family we are very original with our names ;) and I happen to like the names: Kenny, Richie, Tommy, Billy and Brian.

While Ken (H) was visiting he was on the go interviewing different ones and collecting information and pictures for his much anticipated, yet to be released, story about his life book: “You Can’t Take the Bronx Out of the Boy.”

We ended the weekend with dinner at my cousin Brian’s bar/restaurant, JP Doyle’s, with Ken (H), Chris, Larry, Dad, Gabrielle and her “friend” Mike, and Lauren, Alison, Tommy and Kelly. The food was DELICIOUS and the service exceptional; thanks Brian & Jen.
